yummy with a side of updates...

Ok so my mom came over this weekend for dinner an to watch the game with us. Well i made some awsome yummy food...

dessert, apple crisp

Ingredients

Filling:

• 6 Granny Smith apples, peeled, cored, chopped (about 3 1/2 pounds)
• 1/4 cup all-purpose flour
• 1/2 cup brown sugar
• 1 tablespoon lemon juice
• 1/4 cup maple syrup

Topping:

• 1 cup all-purpose flour
• 3/4 cup brown sugar
• 1/4 teaspoon ground cinnamon
• 1/4 teaspoon salt
• 8 tablespoons (1 stick) chilled butter, cut into pieces
• 1/4 cup coarsely chopped pecans

Bourbon Cream:

• 1 cup heavy cream
• 1/4 cup confectioners' sugar
• 1 tablespoon bourbon

• Directions

  Preheat oven to 350 degrees F.

  For the Filling:

  Butter a 9 by 13-inch casserole dish. In a large bowl mix all the filling ingredients together and toss to coat all the apples. Pour in the prepared baking dish

  For topping:

  In a food processor combine the flour, brown sugar, cinnamon and salt in large bowl. Pulse to blend. Pulse in the butter until mixture forms pea size lumps. Add the pecans and pulse 1 or 2 more times. Sprinkle over filling. Bake crisp for 45 to 50 minutes. Cool 10 minutes before serving.

  For Bourbon cream:

  In a medium sized bowl, beat the cream until it begins to thicken. While beating, add the sugar and bourbon and beat until soft peaks form. Dollop over servings of apple crisp.

   And..... Daves work might be holding off on shutting down! yay yay! kinda... just means we wont have to worry bout that for a few more months hopefully longer, but the 330 pm to 330 am really sucks since i dont see him till sunday due to him not getting home till 4am an sleeping most of the day.  ugh life isnt life without some drama and rough roads, right?

family crazieness

Ok so i know its been a while, im not online that often lol. But anywhoo, the holiday season wasn't the greatest this year. Daves work layed him off for the holidays, Machells getting in trouble what seems like daily,Rliey was  well the best baby ever lol. But dave an i argued over everything ( still kinda doing it) =0/ i think its from him being layed off lack of money our cars falling apart not making rent, yadda yadda. lol So our xmas kinda whent like this. I was ina funk on the eve of xmas eve so dave let me open a gift early... lol it was a new nikon'!!!!! yay i was soooo excited to start using it.

Then shell opened one of hers so did Dave an Riley. It cheered me up. My brother came home on leave for his break from AIT (he's a military man now) he came over for a visit for a couple of nights. We played MW3 and COD most of the time lol. I sooo missed my lil brother... Anyway chistmas eve we spent with Daves family opening gifts and visiting.

After that, christmas day was NUTS! We had our xmas,

an then shells dads. We didnt get home untill 9 or 10. (ugh i was sooo sleepy) 

We had lots of fun tho seeing family an eating yummy food. Then the new years well we fell asleep well befor the ball droped due to a cranky baby the night befor. Oh an almost forgot thanksgiving!! We spent that at my moms also, she made some realy good food.

getting mobile!!!

Ok now Riley decides she wants to role over!! Last night we had some family over for dinner and while we were entertaining them little Riley decided she wanted to role over. At first i thought it was a fluke, untill she did it a second time while i was in the kitchen. I came back in the living room and BAM! she is on her cute chunky belly again laughing and chewing on her fave toy hippo rattle! I was a little mad i had missed it. But today she did it again right in front of us. She was reaching for azrial our cat/ second kid lol. (still want a dog tho) 

As for Daves car we think it will be fine have to wait for the dang rain to stop to make sure. But     he put a new part on the radiator so im hoping it helps... I reeeeally need my car back  giggles. Im sooo glad we have awsome friends next door or i would have had to walk in the rain quite a few times to get shell to school and back. We have the best neighbors =0) Oh and dave has been laid off for the holidays =0( love the company but... lol the hubby can drive me a little crazy. 

Oh and my fave time of the month my hair cut. I <3 the salon i go to sagittarius salon you get awsome service. And yes Amber im still taking you for xmas if your reading this  =0) 

Well the little one just woke up from nap and my other should be getting home from school anytime now.

teething an stuff

Well riley will be 6 months soon and she is now cutting TWO teeth!!! Yay , giggles. She is being such a trooper not too fussy at all. She is chewing on everything now. Loves chewing on her little hippo rattle the most. She is starting to like more regular foods too. Dad got her to eat bananas the other day. Still dont care for green beans tho. Going to try carrots again today see if maybe she might change her mind. 

  On another note daves car broke down yesterday so im without a car today. We hope it was just an air pocket or something in the hose from when he was fixing the radiator. Hope there arent more complicated problems we dont know about yet. but its time for me to get the kiddo off to school.

What a week! Its not that bad but still, this is how my week started...

Monday our window was finaly fixed in the living room. They were here very early in the am tho =0/ wasnt happy about that. So i just went about my morning, coffee, cereal and then some chores before lil riley ann wakes up with daddy. Dave works late nights so he sleeps most of the morning ( lucky ducky) 

Lets see... tuesday i think was an ok day besides having no gas so i was stuck at the house ugh.Wrote my brother a letter, we miss him sooooo much lol. ive got some pics of the girls and us i want to send him to give him a smile. Wed well machell decided she wanted to push some major buttons so we ended up arguing =0/ as usual. Riley has been sleeping a lot better on her own and not in her bassinet =0) 

And thursday that would be today! Report cards yay! Not really that is when you get to go face to face with the teacher and hear about all the things your kid does good or bad. ( when i was still in school i would dread these i wasnt a perfect, smart kid lol ) Well i talked to her teacher and she tells me that shell is a very energetic and spirited child (lol) i know this in other words she is quite hyper and eager to play. But i also got to hear the bad =0( pushing friends into walls playing in the bathroom abusing bath room equipment? lol idk yelling in kids faces ect. yikes! Report card wasnt good or bad they dont do As Bs Cs they do S N or O's she got a lot of S's and N's needs improvement. 

I get back home today to Dave and Riley on the couch, just got up. I send machell to the table to study some work she missed at school. An i feed riley her bottle and some peaches i made for her the other day..yummy!

Time for lunch, sorta. Riley didnt want to take a nap so i was juggling cooking, dishes and helping shell with her work. I ended up having dave help before he left for work lol sorta. 

So the rest of the day went crapy, fought with shell over math homework as usual. (Still isnt done) Oh and a few of my outlets decided they didnt want to work today. Dad came to visit for a little bit <3 when my dad comes over. =0) He played with baby Riley while i made dinner then he had to go. After dinner Tonight is the first night Riley will be in her own room =0/ got the baby monitor all hooked up and attached to my hip lol. Lets see how this goes, good i hope.

updates

So its deff been a lil while since my last blog post.Riley is now about 5months old and a little over 12lbs.She is now eating solid foods. We now know that she hates bananas and green beans.She loves acorn squash and peaches so far. And last night Riley fell asleep in her actual bed not her bassinet.. yay! now the crappy news, my boobs have decided they don't want to make milk now.Even after pumping and herbs in two weeks no change. =0( i guess its time to switch to formula. But at least she is healthy.Machell has been quite a handfull lately, between the throwing food on the walls the story making ect. she is truly pushing the limits these days.On the plus side she is doing ok in school.

 Dave has recently found out that the plant will be shutting down soon after the first of the year.First lay offs start next week.I think he will be safe with the first lay offs this round.He has drills next weekend so the money from that will help. If i could find a decent enough job that will pay for child care an gas and i still have a few $ in my pocket for bills an what nots, that would work. 

Oh and my dear awsome cuz showed me a site that teaches you how to make tutus so i think i might try and make one. If it turns out well then i think i might make some xmas gifts for the little girls in the fam or even for the older girls too posibly. lol but i think i will be making most of the gifts this year due to the lack of funds we have going on nowadays.

a little update

Well i dont do this often lol so here ya go.

Its that time of year again kids are back in school and the days are getting cooler. And that meens i get more time in the day to get things done... well sorta lol. Machell is in second grade now and is doing good so far, i just hope she keeps it up and this school year is a little better then the last. lol she did however get in trouble the other day but i didnt agree with the teacher. She had a slip sent home for saying a bad word, well when machell told me what happen i almost laughed. She was in the bathroom and read a bad word on the wall out loud without realizeing it was a bad word. And yes i wrote a note right back. I dont think she should of gotten in trouble for that. They should scrub the bathroom walls.

Riley is getting bigger as she is now around 11 pounds maybe more by now and 23 inches. She is getting sooooo active now, can almost grasp things infront of her =0) tummy time is gettng easier for her too now. She still gets mad after about 10 min of it tho lol. She loves to talk to you and munch on her little fingers. Every morning she wakes up she greets me with the biggest good morning smile and we share what we dreamed about that night. Riley is always such a happy baby.

I just started a new job today cleaning for my landlords other tennant she has. The lady is very nice but deff cant keep up with the house cleaning.She has a few medical problems that makes it hard for her to get around. I just have to go to her house twice a week in the mornings and help clean up the house for her and keep her company while her husband is at work. Dave stays home with riley untill i get home then he is off to work also. Its not much but it helps with gas and other things a little bit, she only lives right down the road.

And one last thing, my brother will be leaving the 19th this month for basic training for the nat. guard. I wont see him for quite some time and that make s me sad. But i am so very proud of him. We all are and i wish him luck, this is a big step in his life. i know he will do just fine.
